Veggie Noodles

Light and refreshing vegetable noodles made from zucchini and other vegetables. A healthy low-carb alternative to traditional pasta.

Ingredients

  • 3 large zucchinis
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • Fresh basil leaves
  • Salt and pepper to taste
  • Nutritional yeast for topping

Instructions

  1. 1. Use spiralizer to create noodles from zucchinis.
  2. 2. Press garlic using garlic press.
  3. 3. Heat olive oil in a large pan over medium heat.
  4. 4. Sauté garlic for 30 seconds until fragrant.
  5. 5. Add zucchini noodles and cherry tomatoes, cook for 3-4 minutes.
  6. 6. Season with salt, pepper, and fresh basil.
  7. 7. Serve topped with nutritional yeast.
